Cohumulone
There are three main α-acids in hops that contribute to beer bitterness, these are humulone, adhumulone and cohumulone. Hops with a high cohumulone level are considered by some brewers to contribute a harsher bitterness than hops that have a low cohumulone level. Cohumulone levels generally range from 20-50% of the total α-acids in hops.
