It is an independent brewery, utilizing the newest technology to produce specialty beers in the age-old Belgian tradition of fine brewery. It is situated in the Flemish country-side in Lochristi about 30 miles from Flanders’ famous city Bruges (Brugge). The art of brewing is practiced by Saskia and Dirk Naudts-Waerniers in their brand-new facility. On request, they develop new beers for Belgian and foreign breweries and also for clients who want to surprise or impress their business partners with first class beer with their own label on the bottles. In order to develop special beers, the "Proefbrouwerij" not only has a micro-brewery, but even a pico-brewery consuming only about 15 kg of malt. To obtain the finest tastes, the "Proefbrouwerij" not only selects the finest malts and hops, but also selects the best water quality as well as the best yeasts out of its own yeast bank containing over 70 famous age-old yeasts.

The Stepaja company, which specializes in foods for diabetics, decided to brew a special beer without sugar. "De Proefbrouwerij" developed 2 magic beers: the STEPA triple (pale, 8% alc.v/v) and the STEPA amber (dark, 6 % v/v) both having less than 0.3 % residual sugar. Special malts were selected to optimize taste and a controlled fermentation in the bottle was employed to reduce the sugar content to below 0.3 %.
