Oud Beersel is known for its lambiek (lambic) that is brewed according to the traditional artisan method and Domus Ad Fontes as a winemaker with the oldest vineyard in Belgium where beautiful, sparkling
pure brut wines are made.

bzart Lambiek Brut Nature is a natural, Belgian sparkling quality beverage based on "Lambiek Oud Beersel". Lambic is a spontaneous fermentation beer and the oldest of the still existing beers that probably originated around the 1300s.
The "Lambiek Oud Beersel" that was used has matured during thirteen moons in old wooden barrels in
Oud Beersel’s cellars. This lambic is bottled and then the "Méthode Traditionnelle" (Traditional Method) is applied during another thirteen moons. This means that after adding sugar and champagne yeast,
the "liqueur de tirage", this lambic is re-fermented. Carbon dioxide develops and is locked in the bottle which causes the lambic to become effervescent. Other intrinsical steps, such as the "remuage" (riddling) and the "dégorgement" (disgorging) follow, which eventually lead to a sparkling, champagnized beverage.
It is typical for Bzart Lambiek that no "liqueur d’expédition" (shipment liquor) is applied before adding the cork. The maturation periods are expressed in "moons" instead of months, and this refers to the Celtic calendar used by our ancestors which was based on the moon cycle that has 28 days. 26 moons of that moon calendar correspond with 24 months of our current sun calendar. The producer of Bzart Lambiek wants to place a link with his objective of “back to the source” using the word "moons". By doing this he wants to indicate that a very tasty kitchen can be created with simple dishes in combination with natural beverages.
This beverage also combines the best of two worlds, the festive character of champagne and the full flavour
of artisan brewed lambic. Traditionally it is said that women prefer a glass of bubbly as an aperitif while most men rather have a quality beer. In some restaurants they have been searching for years for a beverage that will please both women and men.
bzart Lambiek Brut Nature ends this search beautifully and it is probably the first and only champagne lambic beer in the world. This champagnized lambiek brut nature has an alcohol percentage of 8 % volume and is poured from bottles that contain 75 cl. It is ideally suited as an aperitif, a digestive or as a beverage to accompany a meal including shellfish and fish such as mackerel, eel, herring, salmon and halibut. Bzart Lambiek is already mentioned on the menu of renowned restaurants and is distributed by famous
wine merchants.
